For the Chicken:

  • 6 bone-in, skin-on chicken thighs or drumsticks
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • Potatoes, carrots and vegetables for fresh green salad.

For Cooking:

  • 1 tbsp vegetable oil
  • 2 tbsp butter
  • 2 sprigs fresh rosemary

Instructions

1️⃣ Marinate the Chicken – In a bowl, mix olive oil, lemon juice, garlic powder, paprika, salt, and black pepper. Coat the chicken thoroughly and marinate for at least 30 minutes (or up to 2 hours for deeper flavor).

2️⃣ Sear the Chicken – Heat 1 tbsp vegetable oil in a skillet over medium-high heat. Add chicken skin-side down and sear for 5-7 minutes until golden brown. Flip and cook for another 5-7 minutes.

3️⃣ Finish with Butter & Herbs – Reduce heat to medium, add butter and rosemary, and spoon the melted butter over the chicken. Cover and cook until the internal temperature reaches 165°F (74°C).

4️⃣ Serve & Enjoy – Let the chicken rest for a few minutes before serving with mashed potatoes, roasted vegetables, or a fresh green salad.

  • For extra crispiness, pat the chicken dry before marinating.
  • For a spicy kick, add ½ tsp cayenne pepper to the marinade.
