Ingredients

  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 teaspoon pure vanilla extract
  • Green food coloring

 

  • 1/2 cup powdered sugar, for rolling

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the white cake mix, eggs, vegetable oil, and vanilla extract until a smooth dough forms.
  • Add green food coloring to the dough, a few drops at a time, until the desired shade is achieved.
  • Place the powdered sugar in a shallow bowl.
  • Using a tablespoon or cookie scoop, form the dough into balls. Roll each ball in the powdered sugar until fully coated.
  • Arrange the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the cookies have spread and the tops have a crinkled appearance.

 

  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a minty twist, add 1/2 teaspoon of peppermint extract to the dough.
