Ingredients
Scale
- 1 package frozen puff pastry (approximately 500g)
- 1 cup finely diced ham (about 150g)
- 1½ cups shredded cheddar cheese (about 150g)
- 2 large eggs
- 1 tablespoon all-purpose flour
- 1 tablespoon unsalted butter
- 1 cup milk (240ml)
- Pinch of ground nutmeg
- Salt and freshly ground black pepper, to taste
Instructions
-
Prepare the Pastry:
- Thaw the puff pastry according to the package instructions.
- On a lightly floured surface, roll out each sheet to smooth the creases.
- Cut each sheet into 6 equal squares, resulting in 12 squares total.
-
Make the Béchamel Sauce:
- In a saucepan over medium heat, melt the butter.
- Stir in the flour, cooking for about 2 minutes to form a roux.
- Gradually whisk in the milk, ensuring a smooth mixture.
- Continue to cook, stirring constantly, until the sauce thickens.
- Season with nutmeg, salt, and pepper.
- Remove from heat and let it cool slightly.
-
Assemble the Pastries:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, combine the diced ham, shredded cheese, and cooled béchamel sauce.
- Place a heaping tablespoon of the filling onto the center of each pastry square.
- Bring the corners of each square to the center, pinching them together to seal the filling inside.
-
Bake:
- In a small bowl, beat the eggs to create an egg wash.
- Brush the top of each pastry with the egg wash for a glossy finish.
- Bake for 20-25 minutes, or until the pastries are puffed and golden brown.
- Remove from the oven and allow them to cool slightly before serving.
Notes
- Variations: For a different flavor profile, consider adding sautéed mushrooms, caramelized onions, or a sprinkle of fresh herbs like thyme or chives to the filling.
- Storage: Store any leftover pastries in an airtight container in the refrigerator for up to 2 days. Reheat them in a preheated oven at 350°F (175°C) for about 10 minutes to restore their crispiness.
- Make-Ahead: These pastries can be assembled and frozen before baking. To bake from frozen, add an additional 5-10 minutes to the baking time.
