- 1 cup finely chopped cooked chicken
- ½ cup grated cheddar cheese
- ½ cup finely diced mixed vegetables (carrots, peas, or bell peppers)
- ¼ cup bread crumbs (regular or panko)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 large egg
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix chicken, cheese, and vegetables.
- Add breadcrumbs, olive oil, garlic powder, onion powder, salt, and pepper.
- Stir in the egg until well combined.
- Spoon the mixture into a mini muffin pan or silicone mold, pressing lightly.
- Bake for 15-20 minutes or until the tops are golden brown.
- Remove from the oven and let cool for a few minutes.
- Gently pop them out and serve warm with ranch or marinara sauce.
Notes
