Description

These Mini Chicken & Veggie Bites are the perfect high-protein snack or appetizer. Packed with chicken, veggies, and cheese, they’re baked to golden perfection in a mini muffin pan. Great for meal prep, lunchboxes, or a quick bite on the go!


Ingredients

  • 1 cup finely chopped cooked chicken
  • ½ cup grated cheddar cheese
  • ½ cup finely diced mixed vegetables (carrots, peas, or bell peppers)
  • ¼ cup bread crumbs (regular or panko)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 large egg
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a bowl, mix chicken, cheese, and vegetables.
  • Add breadcrumbs, olive oil, garlic powder, onion powder, salt, and pepper.
  • Stir in the egg until well combined.
  • Spoon the mixture into a mini muffin pan or silicone mold, pressing lightly.
  • Bake for 15-20 minutes or until the tops are golden brown.
  • Remove from the oven and let cool for a few minutes.
  • Gently pop them out and serve warm with ranch or marinara sauce.

Notes

  • For a creamier texture, mix in a tablespoon of Greek yogurt.
